Chef Trotter's distinctive spa cuisine is made up of dishes that are healthy, yet exploding with flavors and textures in unique combinations. Introduced as part of One&Only Palmilla's overall spa program, the food has taken off and is now offered throughout the resort as a lighter alternative to the regular fare.

The development of spa cuisine was a natural extension for Chef Trotter, whose culinary philosophy is all about "flavor and purity." Guests at the resort can experience this cuisine at breakfast, lunch and dinner. The dishes are light, clean and focused on the inherent natural flavors of the key ingredients, rather than masking them with fats or sauces. Chef Trotter worked closely with Mary Abbott Hess to ensure that each dish meets a variety of dietary and/or nutritional goals.
