Mary Kimbrough

Mary Kimbrough, RD, LD, owns Food Roots, a culinary tourism business providing food and wine tours in Texas. Prior to founding this enterprise, she was director of Nutrition and Hospitality Services for the University of Texas Southwestern University Hospitals. In this position, she was recognized for her vision and leadership in marrying the culinary arts with the science of nutrition in foodservice.

In addition to her pioneering work in healthcare, Mary has given years of hands-on service to professional organizations including The American Dietetic Association, the Texas Dietetic Association, the Dallas Dietetic Association, and the National Society for Healthcare Food Service Management. She is a charter member and former chair of ADA's Food & Culinary Professionals Dietetic Practice Group. Mary is also an active member and leader in the International Association of Culinary Professionals, Les Dames d'Escoffier Dallas Chapter and plays a leadership role in the Dallas Convivium Slow Foods Chapter.

Mary's numerous seminars, lectures and workshops focus on the message that nutritious can be delicious. She has appeared on numerous television shows, including Chef Graham Kerr's "The Gathering Place." She also has collaborated with prominent master chef Victor Gielisse on various projects, including In Good Taste: A Contemporary Approach to Cooking (Prentice Hall), a textbook-cookbook that joins culinarians and dietitians in pursuit of nutritious contemporary cooking.

Her masterful blend of healthcare nutrition and culinary excitement has earned Mary numerous accolades. In 1998, the International Food Manufacturers Association presented her its Silver Plate Award, and Restaurants & Institutions magazine named her an IVY Award winner. In 2007, Mary presented The American Dietetic Association's Lenna Francis Cooper Memorial Lecture at ADA'a Food and Nutrition Conference and Exposition. On June 12, 2008, Mary presented The Secret Ingredient at the Arizona Dietetic Association.
